Ovaj enzim acetiluje N-terminalni alanin, serin, metionin i glutamatne ostatake u brojnim peptidima i proteinima, uključujući beta-endorfine, kortikotropine i melanotropin, cf. EC 2.3.1.108 alfa-tubulin N-acetiltransferaza.
